i'd rather be baking

This week finds us butting up against the final holiday weekend of the year, fighting our second round of head colds this month, and packing up our house for the impending move. Oh yes, and missing these beauties.

We made these tasty little squares a couple of weeks ago, uploaded the photos, and then somehow forgot about them. But don’t let that fool you — they’re crazy delicious. A buttery cake base provided the perfect home for a bunch of the cherries that I pitted and froze this summer, when they were too cheap to leave at the grocery store.

Alright folks, here we are. Christmas is, well, now and our little kitchen has been finding itself shamefully neglected. Life’s become a bit more chaotic than usual, due in part to the fact that we’re busily packing our spatulas and mixing bowls for a cross-country move.

Don’t worry your pretty little heads — we’re still baking, but the selection process of the recipes we’re stirring up has become a bit more particular. There simply isn’t time for hand-rolled pastries these days.

A couple of months ago, when my local Walmart had zero cans of pumpkin and blogs were buzzing about the so-called shortage, I stocked up on a few cans as soon as I could find them. I’ve been working my way through them slowly but surely, as you may have seen.

The beauty of canned pumpkin is that the average can contains quite enough for several batches of goodness. And when I came across this glorious-sounding recipe, it seemed like the perfect use for the half-full can sitting in my refrigerator.

Everyone should have a handful of cookie recipes in their back pocket (or that awkward cabinet above the stove) that can be whipped up on a moment’s notice, using nothing more than pantry staples. And if one of those recipes is delightfully spiced and perfect for holiday gift-giving, everybody wins.

People, sometimes I make things too complicated. Seriously.

This weekend was a prime example. Due to an excellent price at Sam’s, I now have cranberries coming out of my ears and kind of need to start using them. And for some reason, nearly every recipe I could find that sounded remotely yummy was heavily dependent on the presence of some form of orange (be it juice or zest), and I just wasn’t interested in going to the store for one orange.
