gluten-free peanut butter s’mores bars

I made these bars last week and I fully intended to share them with you sooner. It’s been a heck of a week! But I’m here. And these things are delicious.

I took them to work last Friday because if any day calls for peanut butter and chocolate, it’s Friday. And here you go! You have plenty of time to make some before Friday. Chances are you have some chocolate-hungry coworkers. Am I right?

{light} peach crumb coffee cake

My birthday is next week. I take birthdays seriously. There will definitely be a cake, there will probably be some sort of cake batter-themed breakfast pastry, and quite possibly some Rotel cheese dip. So I’m trying to keep things relatively light for now…and trying to pretend my house isn’t full of Valentines sugar.

Ryan has been traveling on business for a couple of days and I wanted to make a little treat for his return home. He loves coffee cake and let’s be honest, I don’t exactly turn it down.

sweet potato dog chews

We have a favorite local pet supply store that we visit about once a month. They sell the only toys that last more than a week with our dogs and most of their products are really affordable. One thing they sell that’s intrigued us for months is strings of dried sweet potatoes, which are about $15 a pop. Every time we’re in the shop, I think (and resist the urge to shout), I know I could make those! Last week I finally gave it a shot.

Apparently sweet potatoes are actually nutritious for dogs as well as humans! So says the Internet. I realize I’m taking food that’s perfectly fit for human consumption and preparing it for my dogs…this may make me a crazy dog lady. I don’t think I can really argue with that.

power cookies

I feel like I am channeling Joy the Baker with this recipe. This not an ice cream cake, or a giant chocolate cake with layers of fudgy frosting. This is not a giant bowl of ice cream with Reese’s cup bits swirled throughout. These are the things I am dreaming of. These are not those things.

These are kind of like a granola bar in cookie form. They are a tasty, two-bite snack of healthy goodness. They are perfect for eating at your desk or in the car. Don’t ask me how I know.
