These might be my new favorite food. Or at least my new favorite snack…which is very close to the same thing.
We snacked on these last Saturday before running a race with four thousand other crazies. We ate them for breakfast with bacon on Sunday morning. And the past two days I’ve woken up ready for a “snack.” I think I’ll be making a second batch very soon!
These bars are just sweet enough to feel like a treat, with some great protein and whole grains to tide you over till dinner. You’ve made it halfway through the week; you deserve it!
P.S. Do you see my laptop and coffee cup in the background? That’s definitely how I live.
Oatmeal Almond Butter Bars
Barely adapted from How Sweet It Is
I used almond butter here because I have a big batch (that almost killed my food processor – don’t ask) on hand, but feel free to use peanut butter or another nut butter of your choice.
Makes 9 bars
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 cup old fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar
3/4 cup almond butter
1 tablespoon vanilla extract
1/2 cup milk of your choice
1/3 cup chocolate chips
Preheat oven to 350°F. Line an 8″ X 8″ pan with parchment paper or aluminum foil, making sure there’s an overhang on all sides.
With an electric mixer, beat together almond butter and sugar until light and fluffy, about 3 minutes. Add vanilla and mix well. Add flours, oats, baking soda, and salt, and beat until well combined. The dough will look crumbly. With the mixer running on low speed, drizzle in milk and mix well. Stir in chocolate chips.
Press dough evenly into pan (moistened hands work well!). Bake for 18-20 minutes, or until set and golden on top. Cool completely before cutting into bars. Store in an airtight container.
