weeknight chocolate cake

Traditionally speaking, I am not a big cake baker. I’ll chalk it up to my lack of patience, although working in a cupcake bakery is slowly but surely changing that. Nonetheless, the whole process of evening layers and smoothing frosting really gets on my nerves, so I try to avoid it. That’s why I like cakes like this, that need no frosting and really need no actual cake pans.

I was looking for inspiration the other night and found it, not surprisingly, in this cake. It’s almost ridiculously simple, requires only one bowl, and doesn’t have any annoying frosting issues. I love this cake.

applesauce cake

This week we’ve been in Utah for six months and can’t quite believe it. I’m not sure if it’s justified but I feel as though somehow we’ve accomplished something. Or I just want an excuse to make cake.

This is just the sort of homegrown cake that doesn’t really need a special occasion. It’s not fancy or glamorous but it sure is delicious. I received this recipe from my grandmother, who used to make it when I was growing up, but it’s originally from an old Betty Crocker cookbook.

rbb: icebox edition

My house is a mess, my blog is neglected, and my list of projects seems to be growing by the moment. But I had a beautiful week with my family. And I have this.

My family came to town for a week and I just didn’t want to think of anything else, so I pretty much didn’t. And thanks to many delicious dinners out, we didn’t really eat dessert all week. Can you believe it? Me either.

I was thus left with this angel food cake, which we bought to eat with an abundance of strawberries and never did. The other day after everyone had boarded their flights and the house was quiet, I remembered reading a recipe for strawberry icebox cake on Apartment Therapy. They used graham crackers, but if life gives you angel food cake, why not use it, right?

oreo cheesecake bars

So, I really like Annie’s Eats. A lot. Annie makes beautiful food and her recipes are refreshingly real. As in, they aren’t going to take me the entire day to make. I like that in a recipe.

Do you know what else I like? Cheesecake recipes that don’t require a multitude of cream cheese or a water bath. And Oreos. So when I read this post I got really excited.

spiced banana cake

Every week, I buy approximately five, often disgustingly green bananas. And nearly every week, come Friday they are gone. This is because I place one lovingly in Ryan’s hand on his way out the door each morning, as though he were six. Hey, at least I don’t put a note in his lunch or pat him on the head. Although I probably would if I could reach it.

Despite my determination to squeeze some fruit into my husband’s breakfast and pass along some of that potassium and calcium stuff, I woke up last Monday morning to find no less than seven rapidly browning bananas. You know the kind I mean. They’re so mushy that they remind me of baby food and make me gag a little on the inside. I’m going to be such a great mom.
