ranger cookies

I have something of an affinity for recipes with weird names. I’ve also recently discovered the joy of cookies as pre-workout fuel. One cookie, of course. Because I’m so good with the willpower and all.

Does anyone else like to flip through cookbooks while watching their favorite shows? There’s something oddly comforting to me about doing this. I don’t pretend to have a logical reason. It’s okay. The point is that these so-called “ranger cookies” immediately stuck out at me when I found them in good ol’ Better Homes and Gardens. The author gave some sort of cutesy description about how they’re perfect for afternoon hikes. Sorry friend, it’s still a weird name.

caramel apple cookies

Caramel and apples are two of my most favorite things, and I don’t really know why I haven’t made them into cookies sooner. I’ll admit, I love these flavors more than most things in the world, and I’ll happily use the impending chill of autumn as an excuse to enjoy them.

dulce de leche cookies

I really, really love caramel. I realize that every English teacher I’ve ever had would tell me that one “really” is enough, but they’d be wrong. This is caramel we’re talking about, after all. I’d eat it on anything and everything if not for, you know, saturated fat and stuff.

These are certainly not the most glamorous cookies you’ve ever seen, but they are definitely the tastiest cookies I’ve ever baked. Why? Dulce de leche. It’s an intense, thick and creamy caramel sauce and I’d almost guarantee you can find it in your grocery store (in the Hispanic or international foods aisle).

banana oatmeal chocolate chip cookies

I know what you must be thinking: didn’t I just read something about bananas? The back-to-back banana recipes were truly unintentional and yes, I do know how to bake other things, thank you.

It’s okay, though, because the last recipe and this one could not be much different if they tried. brownie mix cookies

This week I’m at home in Arkansas visiting family and hanging out with my “little” sister before she leaves for college. Let’s not talk about it. I may cry.

All this being said, I did two weeks’ worth of baking last week to account for my travels. While grocery shopping I picked up a brownie mix, figuring I could do something with it. I remembered reading about brownie mix cookies somewhere, and started doing a bit of research.
