These might be my new favorite food. Or at least my new favorite snack…which is very close to the same thing.

We snacked on these last Saturday before running a race with four thousand other crazies. We ate them for breakfast with bacon on Sunday morning. And the past two days I’ve woken up ready for a “snack.” I think I’ll be making a second batch very soon!

power cookies

I feel like I am channeling Joy the Baker with this recipe. This not an ice cream cake, or a giant chocolate cake with layers of fudgy frosting. This is not a giant bowl of ice cream with Reese’s cup bits swirled throughout. These are the things I am dreaming of. These are not those things.

These are kind of like a granola bar in cookie form. They are a tasty, two-bite snack of healthy goodness. They are perfect for eating at your desk or in the car. Don’t ask me how I know.

whole wheat english muffins

We’re on an English muffin kick. I’d call it a rut, except that I don’t want it to end (ever). I don’t even know when I started to like English muffins, but here I am buying one of those little sleeves of six every week (sometimes twice a week!) without fail. One night I sent Ryan to the store for something and he came home with a giant sleeve of TWELVE English muffins. Did you know they make such a thing? Glorious. Clearly we are not afraid of carbs.

I made these little beauties on Sunday afternoon and I’ll be honest — they took awhile! But for a day when I had lots of chores to do around the house and could stop sporadically, they worked out perfectly. And I couldn’t believe how well they turned out! Oh man.

whole wheat cinnamon applesauce coffee cake

Ryan loves coffee cake almost as much as he loves coffee. I probably have the planet’s biggest sweet tooth, but he’s happier with desserts that aren’t over the top. Opposites attract! True story.

This coffee cake is perfect for both of us! I don’t mind a lack of sugar when there is a CINNAMON punch involved. I’m not talking about a hint of cinnamon, I’m talking about a PUNCH! It’s October, folks. Let’s get on board with cinnamon everything (including candles, obviously).

berry baked oatmeal

Every weekday morning I stumble straight from bed to the kitchen for breakfast. I do not pass go and I do not collect $200. This is serious business. This is also why I eat cereal, yogurt, and fruit for breakfast 99% of the time — it’s super fast! This is also why although this oatmeal has been on my to-do list for quite awhile, it certainly did not happen until this past weekend. After I ate some cereal, of course.

To be fair, I really don’t like oatmeal. I’m not a fan of the mushiness. But Ryan loves it and I figured this recipe had enough fruit and walnuts and cinnamon involved to be palatable for myself, the oatmeal snob. I still hedged my bets and made a half-batch.
